Ingredients
- 1 tbsp unsalted butter
- 1 small onion, diced
- 3 large cucumber, peeled, unseeded and diced
- 1 medium zucchini, peeled, unseeded and diced
- 1 green bell pepper, peeled, unseeded and diced
- salt, black pepper
- 1 cube chicken stock
- 1 litre water
- freshly chopped parsley for garnish
Method
- heat unsalted butter in a large saucepan over medium-high heat
- add one diced onion, simmer, stirring occasionally, until tender
- add diced cucumber, zucchini, green bell pepper
- use salt, grind in black pepper and bring to a simmer
- when cucumber and zucchini are soft add one stock cube and water
- blend everything until smooth
