Feta and roasted vegetables

Serves 2

Ingredients

  • 2 sweet potatoes
  • 1 beetroot
  • 1 red onion
  • 2 parsnips
  • 2 carrots
  • salt and black pepper
  • olive oil

Method

  1. preheat the oven 200°C or 360°F
  2. chop vegetables roughly
  3. pour the olive oil into a roasting tin
  4. scatter and roll the vegetables in the oil and season with salt and pepper
  5. can be prepared to this stage up to an hour ahead
  6. roast for 30 mins until cooked through

  • serve with feta cheese and lentils
  • or hummus makes a wonderful side dish
