Ingredients
- 2 sweet potatoes
- 1 beetroot
- 1 red onion
- 2 parsnips
- 2 carrots
- salt and black pepper
- olive oil
Method
- preheat the oven 200°C or 360°F
- chop vegetables roughly
- pour the olive oil into a roasting tin
- scatter and roll the vegetables in the oil and season with salt and pepper
- can be prepared to this stage up to an hour ahead
- roast for 30 mins until cooked through
