Serves 6
Ingredients
- 1 medium egg, boiled for 10 mins
- 130 g tuna, canned in water, drained
- 2-3 tbsp homemade mayonnaise
- 5 pitted olives, diced
- 1/2 red onion, chopped
- 1/8 cucumber, diced
- salt and black pepper
- parsley, freshly chopped (optional)
Method
- carefully shell the eggs, chop into small pieces
- in a medium bowl, combine tuna, olives, cucumber, onion and mayonnaise
- spoon over the egg and freshly chopped parsley
- mix everything to combine
