Cake-expres, quatre-quarts

Serves 10

Ingredients

  • 160 g unsalted butter, room temperature
  • 200 g all purpose flour
  • 15 g vanille flavoured sugar
  • 200 g sugar
  • 10 g baking powder
  • 4 eggs

Method

  1. heat oven to 180°C or 325°F
  2. butter the base and sides of a cake tin and line with baking parchment
  3. put all the ingredients in a bowl
  4. beat with a stand mixer for 10 mins
  5. spoon into the tin and lightly smooth with the back of the spoon
  6. bake for 45-50 mins
  7. it's ready when the top is golden brown and a toothpick inserted into the cake comes out clean
  8. allow to cool for 5 mins before turning out
