Tuna salad sandwich spread

Serves 6

Ingredients

  • 1 medium egg, boiled for 10 mins
  • 130 g tuna, canned in water, drained
  • 2-3 tbsp homemade mayonnaise
  • 5 pitted olives, diced
  • 1/2 red onion, chopped
  • 1/8 cucumber, diced
  • salt and black pepper
  • parsley, freshly chopped (optional)

Method

  1. carefully shell the eggs, chop into small pieces
  2. in a medium bowl, combine tuna, olives, cucumber, onion and mayonnaise
  3. spoon over the egg and freshly chopped parsley
  4. mix everything to combine
