Sunny cucumber soup

Serves 4


  • 1 tbsp unsalted butter
  • 1 small onion, diced
  • 3 large cucumber, peeled, unseeded and diced
  • 1 medium zucchini, peeled, unseeded and diced
  • 1 green bell pepper, peeled, unseeded and diced
  • salt, black pepper
  • 1 cube chicken stock
  • 1 litre water
  • freshly chopped parsley for garnish


  1. heat unsalted butter in a large saucepan over medium-high heat
  2. add one diced onion, simmer, stirring occasionally, until tender
  3. add diced cucumber, zucchini, green bell pepper
  4. use salt, grind in black pepper and bring to a simmer
  5. when cucumber and zucchini are soft add one stock cube and water
  6. blend everything until smooth

Tips, Tricks and inspiration

  • optional, if desired, you can garnish with diced cucumber and freshly chopped parsley just before serving
