Caesar salad

Serves 2


  • croutons
  • romaine lettuce
  • 2 skinless, boneless chicken breasts
  • freshly grated Parmesan cheese (optional)


  1. wash the Romaine lettuce and cut it into bite size pieces
  2. lay the chicken breasts in a pan and leave for 5 mins over medium heat
  3. turn the chicken, then cook for 5 mins more
  4. pull the chicken into bite-size strips and scatter half over the leaves
  5. scatter the croutons, then drizzle with your homemade Caesar salad dressing
  6. sprinkle the Parmesan on top and serve straight away

  • homemade Caesar salad dressing includes garlic, anchovies, sea salt, one egg yolk, fresh lemon juice, half a tbsp white wine vinegar, half a cup vegetable oil, a few tbsp low fat yoghurt, freshly grated black pepper, Worcestershire sauce, Parmesan
