Ingredients
- 500 g Mascarpone
- 100 g icing sugar
- 150 g lady fingers
- 200 ml extra strong cold coffee
- 4 egg yolks
- 2 egg whites
- cocoa powder
- instant coffee powder (optional)
Method
- make enough cold coffee to soak the lady fingers
- beat the mascarpone, icing sugar and egg yolks, whisk until pale
- in another bowl whisk the egg whites and 2 tbsp of icing sugar
- very gently whisk this mixture into the creamy yolks
- arrange half the finger biscuits over the bottom of a serving dish, pour over half of the creamy mixture
- repeat the layers, cover and chill for at least 4 hrs
- dust the tiramisu with cocoa powder just before serving
