Serves 6


  • 500 g Mascarpone
  • 100 g icing sugar
  • 150 g lady fingers
  • 200 ml extra strong cold coffee
  • 4 egg yolks
  • 2 egg whites
  • cocoa powder
  • instant coffee powder (optional)


  1. make enough cold coffee to soak the lady fingers
  2. beat the mascarpone, icing sugar and egg yolks, whisk until pale
  3. in another bowl whisk the egg whites and 2 tbsp of icing sugar
  4. very gently whisk this mixture into the creamy yolks
  5. arrange half the finger biscuits over the bottom of a serving dish, pour over half of the creamy mixture
  6. repeat the layers, cover and chill for at least 4 hrs
  7. dust the tiramisu with cocoa powder just before serving
