Ingredients
- salad, leaves cut into bite-size pieces
- 100g cherry tomatoes, halved
- 1 red onion, chopped
- 1 cucumber, sliced
- salt and black pepper
- 2 tbsp olive oil
- 2 tbsp white wine vinegar
- 1 tbsp maple syrup
Method
- chop the red onion, then mix with the 1 tbsp white wine vinegar, set aside
- meanwhile chop the other vegetables
- then mix with the remaining dressing ingredients in a second bowl, and season to taste
- tip everything together, top with the dressing and toss gently to coat
- serve immediately
